A super simple meal that brings a lot of flavor.  Very reminiscent of a chicken gyro with tzatziki.  We like to serve this with a warmed pita on the side.

Ingredients

  • 1.5 lb yellow potatoes, halved & cut into 4ths (cut to the same size or smaller as the chicken below so they cook throughout)
  • 2 bell peppers, sliced
  • 1 zucchini, halved & sliced
  • 1 red onions, sliced
  • 1.5 lb chicken, cut into 1-in” pieces (chicken breasts or thighs)
  • 1/3 cup olive oil
  • 1 lemon, juiced
  • 1/4 cup chopped parsley
  • 3 garlic cloves, minced
  • 1/2 Tbsp. dried oregano
  • 1/2 Tbsp. paprika
  • 1 tsp. garlic powder
  • 1 tsp. onion powder
  • 1 tsp. salt & pepper
  • 1 Tbsp. red wine vinegar

Garnish

  • Cherry tomatoes, halved
  • Lemon slices
  • Chopped parsley
  • Fresh Dill
  • Tzatziki sauce
  • Crumbled feta

Instructions

  1. Preheat oven to 425 degrees.
  2. Arrange all veggies, potatoes and chicken to a large sheet pan.
  3. Mix together olive oil, lemon, garlic, parsley, red wine vinegar and seasonings
  4. Pour the marinade over the ingredients on sheet pan, toss to coat.
  5. Bake in the oven for 35-45 minutes.
  6. Top with tzatziki, fresh parsley, tomatoes and crumbled feta, or anything you like!
