Ingredients
- 1.5 lb yellow potatoes, halved & cut into 4ths (cut to the same size or smaller as the chicken below so they cook throughout)
- 2 bell peppers, sliced
- 1 zucchini, halved & sliced
- 1 red onions, sliced
- 1.5 lb chicken, cut into 1-in” pieces (chicken breasts or thighs)
- 1/3 cup olive oil
- 1 lemon, juiced
- 1/4 cup chopped parsley
- 3 garlic cloves, minced
- 1/2 Tbsp. dried oregano
- 1/2 Tbsp. paprika
- 1 tsp. garlic powder
- 1 tsp. onion powder
- 1 tsp. salt & pepper
- 1 Tbsp. red wine vinegar
Garnish
- Cherry tomatoes, halved
- Lemon slices
- Chopped parsley
- Fresh Dill
- Tzatziki sauce
- Crumbled feta
Instructions
- Preheat oven to 425 degrees.
- Arrange all veggies, potatoes and chicken to a large sheet pan.
- Mix together olive oil, lemon, garlic, parsley, red wine vinegar and seasonings
- Pour the marinade over the ingredients on sheet pan, toss to coat.
- Bake in the oven for 35-45 minutes.
- Top with tzatziki, fresh parsley, tomatoes and crumbled feta, or anything you like!
