Crock Pot Swamp Potatoes

This is a hearty recipe that couldn’t get any easier. A simple rough chop of the ingredients and leave it for 6 hours. This recipe was modified from one posted by Quotindianrecipes.com on Instagram, which did not include green beans and some other ingredients.
Ingredients
- 2 lbs. Yukon gold potatoes, quartered
- 12 oz smoked sausage or kielbasa, sliced
- 1 small onion, larger slices
- 1 (16 oz) bag of frozen green beans
- 1 (10.5 oz) can cream of chicken soup
- 1 cup sour cream
- 1 cup shredded cheddar cheese
- ½ cup milk
- ½ tsp. paprika
- ½ tsp. black pepper
- ½ tsp. onion powder
- 2 Tbsp. chopped green onions (optional)
Instructions
- Lightly grease the crock pot or spray with cooking spray.
- Add diced potatoes, sliced sausage, diced onion and green beans to the crock pot.
- In a bowl, whisk cream of chicken soup, sour cream, milk, paprika, black pepper, and onion powder until smooth.
- Pour the creamy mixture over the potatoes and sausage and stir gently to combine.
- Sprinkle shredded cheddar cheese over the top.
- Cover and cook on LOW for 6 hours or HIGH for 3–4 hours until potatoes are tender.
- Stir gently during the last 30 minutes so the cheese blends into the sauce.
- Garnish with green onions and serve warm.
