This is a hearty recipe that couldn’t get any easier.  A simple rough chop of the ingredients and leave it for 6 hours.  This recipe was modified from one posted by Quotindianrecipes.com on Instagram, which did not include green beans and some other ingredients.

Ingredients

  • 2 lbs. Yukon gold potatoes, quartered
  • 12 oz smoked sausage or kielbasa, sliced
  • 1 small onion, larger slices
  • 1 (16 oz) bag of frozen green beans
  • 1 (10.5 oz) can cream of chicken soup
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • ½ cup milk
  • ½ tsp. paprika
  • ½ tsp. black pepper
  • ½ tsp. onion powder
  • 2 Tbsp. chopped green onions (optional)

Instructions

  1. Lightly grease the crock pot or spray with cooking spray.
  2. Add diced potatoes, sliced sausage, diced onion and green beans to the crock pot.
  3. In a bowl, whisk cream of chicken soup, sour cream, milk, paprika, black pepper, and onion powder until smooth.
  4. Pour the creamy mixture over the potatoes and sausage and stir gently to combine.
  5. Sprinkle shredded cheddar cheese over the top.
  6. Cover and cook on LOW for 6 hours or HIGH for 3–4 hours until potatoes are tender.
  7. Stir gently during the last 30 minutes so the cheese blends into the sauce.
  8. Garnish with green onions and serve warm.
