These delicious sweet potato rounds are full of flavor and can be used as a main dish with a salad, a side dish with chicken or steak, or by themselves as a party appetizer. Either way they are delicious!
Ingredients
- 2 large sweet potatoes (1.5 lb total)
- 2 Tbsp. olive oil
- 1 tsp. salt
- 1/2 tsp. black pepper
- 1/2 tsp. smoked paprika
- 1/2 tsp. garlic powder
- 180 g brie cheese, sliced
- 1/2 cup dried cranberries
- 1/2 cup walnuts, roughly chopped
- 3 Tbsp. honey
- 1 tsp. chili flakes (adjust to taste)
- 1 Tbsp. butter
- Fresh thyme or rosemary, chopped for garnish (optional)
Instructions
- Preheat oven to 425°F and line a baking tray with parchment paper.
- Bring a large pot of salted water to a boil, add whole sweet potatoes, and boil 20–25 minutes until just fork-tender.
- Drain potatoes and let them steam-dry for 5 minutes.
- Place potatoes on the tray and gently smash each one to about 1–1.5 cm thick using the bottom of a glass.
- Drizzle with olive oil and season with salt, black pepper, smoked paprika, and garlic powder.
- Roast for 30–35 minutes, flipping halfway, until deeply golden and crispy on the edges.
- Top with brie slices and dried cranberries, then return to the oven for 5–7 minutes until cheese is melted.
