This is one of those simple recipes that we use all of the time since coming across it in the Montserrat Cookbook. Something so easy as adding a few ingredients to rice, which we cook multiple times a week, can elevate it just enough to make it different. Sure, you are adding cheese to it, but you are only adding about 3 Tbsp. per serving and you are adding tomatoes and green peppers.
Ingredients
- 1 cup rice
- 1 1/2 Tbsp. butter
- 1/4 cup chopped green peppers
- 2 cup tomatoes, chopped
- 1 tsp. salt
- 1/2 cup grated cheese
Instructions

Cook the rice
- Saute the pepper in the butter for 5 minutes
- Add the tomatoes, salt, and rice and cook for 10 minutes
- Add the cheese and leave on the heat until it is melted.
- Serve at one.
Comments
- While the recipe calls for any cheese, we use Havarti.
- From the original recipe that calls for 1/2 cup of any cheese, we lowered that to 1/4 cup.
