Ingredients

  1. 1 lb. lean ground beef
  2. 1 sweet onion finely chopped
  3. 1 tsp. salt
  4. 4 Yukon gold or red potatoes peeled and chopped into 1″ pieces
  5. 1 lb. bag carrots peeled and diced
  6. 1 – 8 oz. can tomato sauce
  7. 1 – 6 oz. can tomato paste
  8. 1 can diced tomatoes
  9. 3 cups low-sodium beef broth
  10. 2 tsp. minced garlic
  11. 1 tsp. parsley flakes
  12. 2 tsp. Italian seasoning
  13. 1 tsp. salt if needed
  14. 1 cups frozen green peas

Instructions

  1. Brown the ground beef in the instant pot on the sauté setting.
  2. Add all of the remaining ingredients and stir together
  3. Cover and see the pressure to high for 5 minutes
  4. Do a quick release and serve.

Comments

  • You can double the recipe if you have a large pressure cooker, 8 quarts or more.
  • This is a more tomato(ie) version of the original Hamburger soup.
  • Do not double the cooking time even if doubling the recipe
  • Feel free to add green beans or other vegetables
  • Serve with a good, hearty bread
