Ingredients
- 1 Tbsp. olive oil
- 4 garlic cloves, minced
- 24 oz. cherry tomatoes
- 1/2 Tbsp. fresh basil, chopped
- Juice of 1/2 a lemon
- 2 15 oz. cans of butterbeans
- 1/4 tsp. salt
- 1/4 tsp. pepper
Instructions
- Add the olive oil to a large skillet on medium high. Add the garlic and cook for 3 minutes.
- Add the cherry tomatoes to the skillet and cook for 8-10 minutes.
- Add the butterbeans to the skillet and cook for another 8-10 minutes until the mixture thickens some.
- Add the salt, pepper, lemon juice, and basil and cook for 5 minutes.
- Serve with fresh bread.
