Ingredients

  • 1 Tbsp. olive oil
  • 4 garlic cloves, minced
  • 24 oz. cherry tomatoes
  • 1/2 Tbsp. fresh basil, chopped
  • Juice of 1/2 a lemon
  • 2 15 oz. cans of butterbeans
  • 1/4 tsp. salt
  • 1/4 tsp. pepper

Instructions

  1. Add the olive oil to a large skillet on medium high. Add the garlic and cook for 3 minutes.
  2. Add the cherry tomatoes to the skillet and cook for 8-10 minutes.
  3. Add the butterbeans to the skillet and cook for another 8-10 minutes until the mixture thickens some.
  4. Add the salt, pepper, lemon juice, and basil and cook for 5 minutes.
  5. Serve with fresh bread.
