Montserrat Rice

This is one of those simple recipes that we use all of the time since coming across it in the Montserrat Cookbook.  Something so easy as adding a few ingredients to rice, which we cook multiple times a week, can elevate it just enough to make it different.  Sure, you are adding cheese to it, but you are only adding about 3 Tbsp. per serving and you are adding tomatoes and green peppers.

Ingredients

  • 1 cup rice
  • 1 1/2 Tbsp. butter
  • 1/4 cup chopped green peppers
  • 2 cup tomatoes, chopped
  • 1 tsp. salt
  • 1/2 cup grated cheese

Instructions

  1. Cook the rice
  2. Saute the pepper in the butter for 5 minutes
  3. Add the tomatoes, salt, and rice and cook for 10 minutes
  4. Add the cheese and leave on the heat until it is melted.
  5. Serve at one.

Comments

  1. While the recipe calls for any cheese, we use Havarti.
  2. From the original recipe that calls for 1/2 cup of any cheese, we lowered that to 1/4 cup.
