The following is a recipe from the Croney’s Old Manor in Nevis. The recipe was obtained from the Nevis Great House Cookbook found during one of our stays on nearby Montserrat.
Croney’s Old Manor
A beautifully restored seventeenth century sugar plantation, dating back to a 1690 land grant, set high on the dramatically foliag-clad, breeze-cooled slopes of Mount Nevis.
The cut-stone buildings of the estate, originally erected during the late 1700’s and early 1800’s, lie scattered throughout the grounds and lushly tropical gardens. Structures that had once houses the estate’s Blacksmith, the estate workers, the Hospital and the ancient Smoke House, have all been carefully converted to spacious modern rooms and were originally opened to the public in 1968. Vikki Knorr and her son Greg bought the Old Manor Estate in 1981, continuing to restore the beautiful original stone building and the impressive gardens. Over the years Vikki and her staff have lovingly created many of the unique fine signature recipes now served to the many discerning guests at Croney’s Old Manor.
Unfortunately, the hotel is no longer in business and as of 2025 is listed for sale.
Ingredients
- 2 packages (3 oz) vanilla pudding
- 3 cups milk
- 4 Tbsp. instant coffee powder
- 1/2 cup cream, whipped
- 1 baked 9″ pastry shell
- 1/2 cup chopped walnuts
Instructions
- Combine the pudding mix, milk and coffee.
- Cook as directed on the pudding mix package
- Cook and fold in the whipped cream
- Pour into pie shell and sprinkle with nuts

Before adding the filling to the pie shell, melt chocolate with butter and line the pie shell
