Ingredients
- 1 loaf French bread (day old bread works best)
- 1 cup onion, chopped
- 2 Tbsp. butter
- 1 10-oz package of frozen chopped spinach, thawed
- Pinch of salt and pepper
- 6 oz. Swiss cheese, shredded
- 3 eggs
- 2 1/2 cups milk
Instructions
- Spray a 9×13 glass pan with Pam or butter.
- Cut the bread into thin slices and line the pan with half of the slices
- Saute the onion in butter for about 5 minutes
- Squeeze the spinach to drain and add to the onion pan. Add salt and pepper, stirring to combine.
- Spread the spinach over the bread in the pan.
- Sprinkle with the Swiss cheese, retaining 1/2 a cup.
- Layer the remaining bread on top.
- Beat the 3 eggs with the milk and pour over the bread.
- Sprinkle with the remaining 1/2 cup Swiss cheese.
- Cover and chill for at least 1 hour, or overnight.
- Bake at 375 degrees for 45 minutes.
- Let stand 10 minutes before serving.
