Spicy Pasta Salad with Gouda, Tomatoes & Basil

Ingredients

  • 12 oz. Mostaccioli pasta noodles
  • 1/2 cup mayonnaise
  • 1/4 whole milk
  • 4 Tbsp. white vinegar
  • 1/2 tsp salt
  • 1/2 tsp ground pepper
  • 10 oz. grape tomatoes, halved
  • 1/2 lb. smoked gouda, cubed
  • 24 basil leaves, whole
  • 1 1/2 tsp. Adobo sauce (from chipotle peppers) or 1 minced chipotle pepper

Instructions

  1. Cook pasta until done.  Drain and rinse with cold water until no longer hot 
  2. Mix the mayonnaise, milk, vinegar, salt, pepper, and adobo in a small bowl 
  3. In a large bowl, stir together the pasta, dressing, halved tomatoes and cubed Gouda cheese.  Taste for seasonings. 
  4. Stir in the basil at the end and refrigerate a couple hours before serving.
