Slow Cooker Sesame Ginger Beef

A simple, flavorful beef recipe served perfectly over rice. We enjoy it with a side of broccoli or Korean carrot salad.
Ingredients
- 2 lbs. beef stew meat
- ½ cup low-sodium soy sauce
- ⅓ cup packed brown sugar
- ¼ cup beef broth
- 1 Tbsp. toasted sesame oil
- 4 cloves garlic, minced
- 1½ Tbsp. freshly grated ginger
- 1 Tbsp. rice vinegar
- ½ tsp. red pepper flakes, or more to taste
- 1 Tbsp. cornstarch
Instructions
- Add the beef to the slow cooker, followed by the soy sauce, brown sugar, beef broth, sesame oil, garlic, ginger, rice vinegar, and red pepper flakes.
- Cover and cook on low for 8–9 hours or high for 4–5 hours, until the beef is fall-apart tender.
- Remove about ¼ to ⅓ cup of the cooking liquid and whisk in the cornstarch until completely smooth. Pour it back into the slow cooker, cover, and cook on high for another 20–30 minutes.
- That little extra step gives the sauce more body, better texture, and all that beautiful glossiness.
