Ingredients
- 1/2 lb. whole-wheat spaghetti pasta
- 4 tsp. olive oil
- 3 large garlic cloves, sliced thin
- 2 cups broccoli florets
- 1/2 tsp. salt
- 1/4 tsp. red pepper flakes
- 1 lemon, zested
- 1/3 cup crumbled reduced-fat soft goat cheese
Instructions
- Cook spaghetti according to directions. Reserving ¼ cup of water, drain the pasta. Transfer into a large serving bowl.
- While the pasta is cooking, heat the olive oil in a skillet. Add the garlic and cook for about 30 seconds or until fragrant. Add the broccoli and continue cooking until tender; about 5 minutes.
- Add broccoli, lemon zest, salt, and pepper flakes to pasta . Toss adding just enough of the reserved pasta water to moisten.
- Sprinkle with goat cheese and serve.
