Pasta with Broccoli & Goat Cheese

Ingredients

  • 1/2 lb. whole-wheat spaghetti pasta
  • 4 tsp. olive oil
  • 3 large garlic cloves, sliced thin
  • 2 cups broccoli florets
  • 1/2 tsp. salt
  • 1/4 tsp. red pepper flakes
  • 1 lemon, zested
  • 1/3 cup crumbled reduced-fat soft goat cheese

Instructions

  1. Cook spaghetti according to directions.  Reserving ¼ cup of water, drain the pasta.  Transfer into a large serving bowl. 
  2. While the pasta is cooking, heat the olive oil in a skillet.  Add the garlic and cook for about 30 seconds or until fragrant.  Add the broccoli and continue cooking until tender; about 5 minutes. 
  3. Add broccoli, lemon zest, salt, and pepper flakes to pasta .  Toss adding just enough of the reserved pasta water to moisten. 
  4. Sprinkle with goat cheese and serve.
