Goat water is the national dish of Montserrat and is basically a beef stew made of goat meat. Some recipes call for a more hardy stew of potatoes, carrots and celery while others are simply goat meat and seasonings.
All versions are delicious as goat meat is lean and tender. While not as common in the United States, goat is the 4th most consumed meat worldwide and is up to 70% of the meat consumed throughout Asia, Africa and the Middle East.
Ingredients
- 6 lbs. goat meat
- 8-10 whole cloves
- 2 medium onions
- 2 medium sweet peppers
- 1 Tbsp. black pepper
- Fresh herbs and chives
- 4 oz. flour
- Salt to taste
- 1 1/2 Tbsp. coloring (browning)
Instructions
- Cut the goat meat into serving pieces
- Wash the meat in water and vinegar
- Season for 10-15 minutes
- Half fill a large pot with water
- Bring to a boil and add the goat meat
- Skim the pot when meat is about cooked
- Add cloves, herbs and all the seasonings
- Add the flour and browning and leave to boil at a simmer until the meat is tender.
- Check consistency for correct thickness and color
- Leave to simmer for a further 20 minutes
