Goat Water
Ingredients
6 lbs. goat meat
8-10 whole cloves
2 medium onions
2 medium sweet peppers
1 Tbsp. black pepper
Fresh herbs and chives
4 oz. flour
Salt to taste
1 1/2 Tbsp. coloring (browning)
Instructions
Cut the goat meat into serving pieces
Wash the meat in water and vinegar
Season for 10-15 minutes
Half fill a large pot with water
Bring to a boil and add the goat meat
Skim the pot when meat is about cooked
Add cloves, herbs and all the seasonings
Add the flour and browning and leave to boil at a simmer until the meat is tender.
Check consistency for correct thickness and color
Leave to simmer for a further 20 minutes
