Chicken Cheese Strata

Ingredients

  • 1 loaf French bread (day old bread works best)
  • 1 cup onion, chopped
  • 2 Tbsp. butter
  • 1 10-oz package of frozen chopped spinach, thawed
  • Pinch of salt and pepper
  • 6 oz. Swiss cheese, shredded
  • 3 eggs
  • 2 1/2 cups milk

Instructions

  1. Spray a 9×13 glass pan with Pam or butter.  
  2. Cut the bread into thin slices and line the pan with half of the slices
  3. Saute the onion in butter for about 5 minutes
  4. Squeeze the spinach to drain and add to the onion pan.  Add salt and pepper, stirring to combine.
  5. Spread the spinach over the bread in the pan.
  6. Sprinkle with the Swiss cheese, retaining 1/2 a cup.
  7. Layer the remaining bread on top.
  8. Beat the 3 eggs with the milk and pour over the bread.
  9. Sprinkle with the remaining 1/2 cup Swiss cheese.
  10. Cover and chill for at least 1 hour, or overnight.
  11. Bake at 375 degrees for 45 minutes.
  12. Let stand 10 minutes before serving.
