Spaghetti Squash with Baked Feta

Ingredients

  • 1 spaghetti squash split in half and seeds removed
  • 1 8 oz. block feta
  • 4 cloves garlic minced
  • 1 carton cherry or grape tomatoes halved
  • 1 handful basil
  • 2 tablespoon balsamic glaze
  • 3-4 tablespoon olive oil
  • Kosher salt 

Instructions

  1. Preheat the oven to 400°F.
  2. Place the split, seeded squash halves on a baking sheet. Drizzle with olive oil and sprinkle with a pinch of salt.
  3. Break the feta in half and place each half in the middle of the squash. Evenly distribute minced garlic and halved tomatoes on top. Drizzle with olive oil and add another pinch of salt.
  4. Bake for 1 hour to 1 hour and 15 minutes, or until the squash is tender and the cheese is melted.
  5. Stir the contents together, incorporating the melted feta. Top with fresh basil and a drizzle of balsamic glaze. Best enjoyed immediately!
